Paneer tikka(tandoori and green)




PANEER TIKKA'S:

Tandoor marinade:
Ingredients:
Paneer cubes : 5
Green bellpepper: 1/2, cut in chunks
Red bellpepper: 1/2, cut in chunks
Small red onion : cut in chunks
Thick curd/yogurt : 1/2 cup
ginger garlicpaste : 1 tsp,
Chaat masala : 1 tsp
Garam masala : 1 tsp
tandoor masala : 1tsp
salt : to taste
Orange food color: a pinch
Oil
Method 1:
Mix curd,ginger garlic paste,chaat masala,garam masala,salt ,orange food color till smooth. Check for seasoning. Add the paneer cubes. Mix well. The marinate should coat the paneer cubes well. Cover, refrigerate for 4 hours. For best results leave it overnight.


Green marinade:
Ingredients:
Paneer cubes: 5
Green bellpepper: 1/2, cut in chunks
Red bellpepper: 1/2, cut in chunks
Small red onion : cut in chunks
Thick curd/yogurt : 1/2 cup
Green chutney : 3 tblsp (can use store bought or homemade.Make sure it is thick)
Ginger garlic paste :1 tblsp
Chaat masala : 1 tsp
Garam masala : 1 tsp
Salt : to taste
Oil

Method 2:
Mix curd,green chutney,garlic,ginger,chaat masala,garam masala ,salt till smooth. Check for seasoning. Add the paneer cubes. Mix well. The marinate should coat the paneer cubes well. Cover, refrigerate for 4 hours. For best results leave it overnight.



For Grilling :
Need 10" bamboo skewers
Soak skewers in water for an hour.Remove the skewers from water and pat them dry.Thread bellpeppers, onion and marinated paneer cubes onto the skewers and brush a tsp of oil .Preheat oven broiler to high.Broil for 10 minutes or till you see brown-black spots on your vegetables and paneer cubes. You need to be really carefuly and keep an eye on the skewers.

Or

You can cook on barbecue or hot grill for 4-5 mins turning frequently.I usually use a baking pan and rest the skewers on the edges. This helps if excess marinade drips. Also add a little water to your pan. This helps in keeping the vegetables and paneer cubes moist. Serve Hot.
